Date Night

 

Good morning loves!

Hope you had an amazing weekend!  Mine was mostly spent with good friends, loved ones, and amazing food.  So much so, that I had no clue where to begin.  So, since everything I do makes sense,  I thought we start backwards.  It’s Monday, let’s keep it exciting shall we?

Sunday

Lunch

IMG_7169Bloody Mary.  Obviously, I only remember a picture of the best part of the meal.

It was my cousins baptism, so there was a lunch after Church.  Pretty good time.  I don’t get to see them often, so when we do it tends to be short, but sweet.

*insert*  lots of bread, shrimp scamp, and cake.  I left hungry though.  (Bottomless pit).

Date night

I decided to stay in and enjoy a good dinner by myself.  I was hungry and since I never have time to make a “typical” meal for dinner, I decided to make it a bit more special.  Plus, I needed to clean out the fridge.

IMG_7177Some specialty brew and appetizer of whole grain bread and gigande bean spread while prepping. A good start, no?

IMG_7191Sauteed kale and tomatoes in garlic.  Toast topped with a fried egg and some goat cheese.  Simple and delicious.  This has literally become one of my favorite meals.  So easy and so flavorful.  Of course accompanied by a good drink.

IMG_7204I was going to go out to get dessert, but then I thought, “You have the whole kitchen by yourself, and a pint of ice cream already in the freezer, let get back to your roots.”

IMG_7198Vegan brownies it was.  Topped with coconut milk ice-cream and a good disney movie.  I was a pretty happy  camper.  I got the recipe from Alicia Silverstones, Kind book.  It was good, but not going to lie, I’ve made better.

So date night was a success.  Home to yourself.  Cooking for one.  Baking for seven and getting to eat for three.  No compromise on what to see.  And you get to be in your pj’s at 6pm.   Definitely needed after the last few days.  I was pretty proud of myself from this weekend.  I was able to be with family and friends.  Go out and go with the flow with whatever came up.  The weather was beautiful too, so it gave me the excuse to be out, get dressed, and love every minute of it.  Oh, and eat everything.

Creating Mountains

Good morning ya’ll!

It’s Freaky Friday (as my socks would say) and I couldn’t be happier!  I got 4 days off, and wouldn’t you know I have something to do everyday.  I could take it or leave it.  I’m one to really just want to read and do school work all day.  Maybe a siesta to eat something amazing in between would make it an ideal day.  I live on the edge.  Anyway, I will definitely have to practice staying grounded this weekend.  I can be busy with routine during the week, but busy weekends being all over the place (literally hours), I try to focus on just staying present.  Enjoy what is going on right now and not making it bigger than what it is.

BreakfastIMG_6920Peanut butta and jelly time!  I’m corny.  Just the same flax quinoa bread and half a banana.  Delish!

LunchIMG_6927This is why salads keep me full.  I pile it on high.  Trying to make a mountain out of a mole hill when it comes to nutrients.  Some massaged kale, quinoa, tomato, feta, avocado, gigande bean spread (love this. alot), and cilantro.  Dressed in lemon dressing.  Lovely.

DinnerIMG_6938Thought I take this last day and dedicate it to greenery.  Outings make it difficult to get those healthy goodness in.

Keepin’ It Cool

Good Morning!

Hope you all have a fabulous day planned!  Or maybe your just doing the same ol’ routine, as I am.  You know what’s making it ten times better though?  This weather!  It feels amazing not being frozen to pieces every time you walked outside.  The sun is coming out really early now, like before 6am, like before my eyes are really open.  Must embrace it!

With the warming weather, I thought I try a some different meals.  Twas tasty and filling!

BreakfastIMG_6900Raw ginger cereal with almond milk and banana.  I can get used to eating this in the summer.   I ate it before yoga and worked out great.  Did not feel heavy at all while doing my practice.

LunchIMG_6904Tuna!!! I’ve been actually starting to crave a good tuna sandwich and it comes back whenever it’s really nice out.  I mixed mine with feta cheese and topped it over flax quinoa bread that I spread with giganda bean puree.  So amazing!  I also did a different kind of salad of sprouts tomatoes and sliced carrots.  The only not so pleasant part was this actually sat in my stomach foreverrr.  Not really in a full way, but bloated way.  I want to say it was maybe the carrots?  I have not had raw carrots in a really long time, so my stomach has to get used  to it?  Well I know it’s not the bread or sprouts since I have that on regular basis, which is a relief, because I’m not about to give that up 😉

Snacks were unpictured.  Just an orange and grapefruit.  Ohhh, and a Kombucha!  Ginger to be exact.  When I think about it it, could have been the bubbles from that messing with my stomach.

Well, with this warm weather, I am absolutely ecstatic about adding some juices, kombucha, and raw foods, and sandwiches to my diet.  I am trying to insert some more cooling foods, but without cooling down my system just yet.  Make sense?  I’m trying to make sense of it too, so we’ll watch this unfold together!

Breaking The “Rules”

Good morning!!!

Hope you all had a productive beginning of the week.  If not that, then just a good one in general.  I’ve been keeping pretty busy and my from food to timing have been a little wacky.  Hopefully today and the next few days will be a little better.

Monday 

Twas my usual routine of blogging, yoga, school, then work.  I tried to focus on keeping grounded and giving my body a chance to regroup from the weekend.  For that I woke up later, ate less, and ate a little healthier.  Even my yoga practice was a bit restorative.

Tuesday 

Went a little different for me.  I got home a little late from work last night, but I knew if I didn’t go to yoga early… I would never go.  So with an early start, twas time for yoga and then get ready for work, an actual day shift.  Shocker!

1.  Ate in the car.  Still really good….  Probably would have enjoyed it better open-faced, pretty, and eating while sitting at the kitchen table.  Doing 2 things at once, especially one that involves hands and more concentration isn’t the best thing for most people.   Food digest better and is more appreciative when it’s just you and your meal.

2.  Eating in a rush.  I was starving around 12pm yesterday, only to find out my break wasn’t until 2! Perfect.  So instead, I took a 15 and ate my salad in probably 12 minutes.  Now, I am a fast eater, so I know that would not have been a problem, but lately I have been pacing myself.  Chewing and appreciating my meals.  Once again, food digest more easily since the saliva helps break down the food.  Also, the slower you eat, the chances are greater you will feel satisfied faster and longer.

3.  Big dinner.    I knew I didn’t want to make lunch my main meal, mainly because I didn’t have time to think about it.  I could get myself home early enough to make myself something hot.  Usually I would prefer to do this for lunch, as that usually always is my biggest meal.  It wasn’t so bad though, as I stuck to 1 plate and was able to have a couple cups of tea to ease the digestion.

So, I’m alive and good.  These were mostly taken from a lifestyle of Ayurveda, or any healthy lifestyle really.  Eating slow and at peace, and not eating late.  If this was a consistent schedule, obviously I would need to adjust.  It took a while for me to get used working afternoons, so as always is just a matter of time and figuring out what works for you.  Did I feel bad-ass breaking my rules?  Not so much.  I kind of break the “traditional ways” of society on a daily basis 😉

Simple Pleasures

This Weekend’s Simple Pleasures.

1.  A lunch feast to kick off a weekend with my main foodie partner (aka: my bro).  Pizza, soup, and salad, and… avocado fries?  Sure, why not?

2.  Mani and pedis.  All of a sudden you feel like a girl again.

3.  Baking lemon bars at 10pm with your bestie.  Eaten warm with a super tart face.  Awesome.

4.  A free yoga class.  Now, I still got $20 in my pocket.  I’m about to pop some tags?

5.  Vegan fast food!  Pita with hummus, artichoke,  sun-dried tomatoes, onions, and fried falafals.  Yes, please.

6.  Cleaning your room.  Never thought I would ever say that, but tis true.  Feels pretty good having your own decluttered probably-be-messy-in-a-week space.

7.  The only “home-made” meal I had all weekend.  Leftover pad thai, daddy-grilled salmon, and sauteed peppers.  Oh yea, just some chocolate stout on the side.  BAMF.

8.  Being able to go out to Sunday brunch (Panera)  with all your co-workers and NOT talk about work.

9.  Bread and butter? Eh.  Bread and roasted garlic?  F*** yea!!!

10.  Reading.  Finally got to finish this book!  Amazing.  Now to remember it.  Share it.  Live it.

Easy Eats

Good Morning!!

Congratulations! You made it to Friday!  To say I’m a little relieved is somewhat of an understatement.  I may be feeling more towards omg-i’m-finally-off-now-i-can-do-everything.  Hah. I have big goals for this weekend.  As in, a deep spring cleaning within my room, packing up, and moving back to my old crib (my bedroom).  We shall see how that goes, but for today I’m gonna enjoy.

My last couple of eats have been pretty good.  Simple.  Easy.  Lazy.  I’m-too-busy-to-bother kinds of meals.

So through out this week, I tried to have more healthy meals, and keep it semi-interesting.  I actually wanted to keep vegan for the week, but yesterdays warm quinoa salad was begging for some crumbled cheese.  So happy it happened.

The only thing I usually can’t get enough of is breakfast.  I think when I don’t have to wear a blanket while I eat is when I will officially say goodbye to hot oatmeal. * Tear 😦

Next week, I’ll most likely be having a little more time on my hands, so maybe I can spare a recipe?  Bake?  We’ll see.  I want to try to get back into my kitchen roots.

How To Make a Bad-Ass Salad

Good morning everyone!

I hope you guys had a good day yesterday. Mine was pretty good and productive, and I noticed that totally helped make this week go by.  By keeping up with work, yoga, and my job, I can’t believe – wait, yes I can, that it’s Thursday.  It was actually so hard for me to wake up, I think I’m actually pushing my body to limits once more, but I’m determined to get done what’s needed.  You know, just do it. Technically today is like my Friday 😉

Here’s what I’ve been loving lately.  I try to make it a few times a week.  When I don’t, I miss it.  It’s delicious.  Makes you feel good.  It is a light way to fill you up.  It’s almost a how-to on a recipe, soooo, I hope you enjoy!

A Bad Ass Salad

A Bad-Ass Salad must contain:

  • Good hearty greens/vegetables
  • Protein
  • Good fats
  • Spices
  • Dressing
  • Yumminess

My salad I’ve been hooked on lately has been a “Detox” Bad-Ass Salad.  Similar to this one, but I added some oomph, nutrition facts, and options for a better, healthier, more filling, bad-ass salad.

“Detox” Bad-Ass Salad 

  • Kale – an anti-inflammatory food, full of antioxidants, vitamin A and C, more calcium than milk, and full of fiber and sulfur which is great for detox.  
  • Sprouts – phytoestrogens and isoflavanoids which are known to be anticancer properties.  Depending on the sprout, may have different vitamin and protein content
  • Quinoa – a complete protien, full of fiber, calcium, magnesium, iron, and is gluten-free.  If you buy this fair trade and organic, you are not only helping yourselves, but other small communities.
  • Pumpkin and Sunflower Seeds with an Organic Ayurveda Chili Blend – healthy fats, fiber, essential amino acids, protein, and magnesium.  The spices are great for taste, digestion, and mineral content.
  • Avocado – highest amount of protein in any fruit!  Also is part of the healthy(unsaturated) fat family and is full of fiber.  Love.
  • Cilantro – rich in antioxidants, essential oils, vitamins, minerals, and fiber.  A good detoxify-er for it stimulates digestion.
  • Olive oil, apple-cider vinegar, and lemon – Healthy fats, detoxifying properties, clearer skin, and help with digestion.
  • Himalayan sea salt – an unprocessed raw salt to taste.

So there you have it.  The power-house of all salads.  Now you can make it using different greens such as chard, different sprouts, carrots, seasonal raw veggies, beans, and hummus.  You can also give your dressing a sweet kick with some raw honey.  You can add superfoods such as goji-berries or cacao nibs to chia seeds or hemp seeds.  Seriously, salads are easy and endless.  And to make a filling and tasty is not hard at all.  I absolutely love good salads with the warmer weather, and between my oatmeal and salads, I love to show how it can be done right!  Maybe one day I’ll have a more indulgent salad for all you deserving foodies 😉
